Chocolate Oat Bars

Simple, soft and moreish - these are great as a lunchbox treat or an adult afternoon snack. Despite their simplicty they are surprisingly filling and the thick layer of chocolate on top is sure to satisfy your sweet tooth too.

Oat Bars
- 500 g rolled oats
- 100 g coconut flour
- 50 ml coconut oil (melted)
- 50 g butter (melted)
- 2 tbsp honey
- 2 tbsp black treacle
Chocolate Layer
- 300 g dark chocolate (melted)
- 1 tbsp coconut oil (melted)
- 1 tbsp tahini
Oat Bars
Preheat the oven to 180oC.
Add all the ingredients into a bowl and combine well.
Spread the mixture into your silicone bar moulds. If you don't have these then cupcake moulds will work too. Ensure there is enough space at the top of each for you to add a layer of chocolate once out of the oven. Bake for no more than 10 minutes.
Once out of the oven, leave to cool slightly on a wire rack.
Assembling Your Oat Bars
Once your bars are out of the oven and slightly cooled start pouring your chocolate mixture over each bar evenly.
Feel free to sprinkly any desired toppings - nuts, seeds etc. I usually opt for coconut flakes.
Refrigerate to set for a few hours until firm enough to pop out of the moulds.
These can last for up to seven days in an air-tight container.
