Chocolate Oat Bars

Simple, soft and moreish – these are great as a lunchbox treat or an adult elevenses or afternoon snack. Despite their simplicity, they are surprisingly filling and the thick layer of chocolate on top is sure to satisfy your sweet tooth too.

With the oat base feel free to pimp up as you please; perhaps throw a few seed combos in there or some crushed nuts. Keep in mind, you may just need to add a little more butter, honey and treacle to keep the mixture moist. There is little than can go wrong with this mix so don’t be afraid to experiment.

For the chocolate layer, if you’re not a fan of tahini or coconut oil, you can of course just keep to dark chocolate. However, I really do like both the taste and the misguided belief that this must make the bar a little bit healthier than just having chocolate. On a serious note, the slightly soft but firm texture and nuttiness from the addition of the tahini is delightful.

If kept in an air-tight container, these bars can last for up to seven days and still taste incredible, so great to make at the weekend in preparation for the week ahead whether at school or the office.

Ingredients
  

Oat Bars

  • 500 g rolled oats
  • 100 g coconut flour
  • 50 ml coconut oil (melted)
  • 50 g butter (melted)
  • 2 tbsp honey
  • 2 tbsp black treacle

Chocolate Layer

  • 300 g dark chocolate (melted)
  • 1 tbsp coconut oil (melted)
  • 1 tbsp tahini

Instructions
 

Oat Bars

  • Preheat the oven to 180oC.
  • Add all the ingredients into a bowl and combine well.
  • Spread the mixture into your silicone bar moulds. If you don't have these then cupcake moulds will work too. Ensure there is enough space at the top of each for you to add a layer of chocolate once out of the oven. Bake for no more than 10 minutes.
  • Once out of the oven, leave to cool slightly on a wire rack.

Chocolate Layer

  • Melt the dark chocolate and add the melted coconut oil and tahini. Stir until throguhly combined.

Assembling Your Oat Bars

  • Once your bars are out of the oven and slightly cooled start pouring your chocolate mixture over each bar evenly.
  • Feel free to sprinkly any desired toppings – nuts, seeds etc. I usually opt for coconut flakes.
  • Refrigerate to set for a few hours until firm enough to pop out of the moulds.
  • These can last for up to seven days in an air-tight container.
